CLASSROOM ACTION RESEARCH: ENHANCING COFFEE-MAKING SKILLS USING A MOKA POT THROUGH DEMONSTRATION AND CONSTRUCTIONISM THEORY ON CAREER SIMULATION FOR MATHAYOM 2 STUDENTS

การวิจัยครั้งนี้มีวัตถุประสงค์เพื่อพัฒนาทักษะในการฝึกทักษะการชงกาแฟด้วยหม้อต้มกาแฟโมก้า โดยใช้การจัดการเรียนรู้แบบสาธิตควบคู่กับการสร้างทฤษฎี เป็นการวิจัยเชิงปฏิบัติการในห้องเรียน (Action Research) 3 รอบ โดยทุกรอบดำเนินการตามขั้นตอน PAOR คือ Plan, Action, Observe และ Reflect กลุ่มเป้าหมาย คือ นักเรียนชั้นมัธยมศึกษาปีที่ 2 โรงเรียนวังน้ำคูหาศึกษา จำนวน 9 คน เครื่องมือที่ใช้ในการวิจัยมี 2 ประเภท คือ 1. แผนการเรียนรู้ 2. แบบประเมินความสามารถ วิเคราะห์ข้อมูลโดยใช้การวิเคราะห์เนื้อหา ค่าเฉลี่ย และเปอร์เซ็นต์ผลการวิจัยพบว่า ในรอบแรก มีนักเรียนผ่านเกณฑ์ 3 คน และนักเรียนไม่ผ่านเกณฑ์ 6 คน มีคะแนนประเมินรวม 61.37 เปอร์เซ็นต์ ซึ่งยังไม่ผ่านเกณฑ์ 70 เปอร์เซ็นต์ ผู้วิจัยได้นำเงื่อนไขของปัญหาเข้ามาพิจารณา ค้นหาแนวทางแก้ไขและปรับปรุงการสอนในรอบที่ 2 ซึ่งผลการวิจัยพบว่า มีนักเรียนที่ผ่านเกณฑ์ จำนวน 6 คน และนักเรียนที่ไม่ผ่านเกณฑ์ จำนวน 3 คน มีคะแนนประเมินรวมเท่ากับร้อยละ 68.28 ซึ่งยังไม่ผ่านเกณฑ์ร้อยละ 70 ในรอบที่ 3 ผลการวิจัยพบว่า นักเรียนทั้ง 2 คน จำนวน 9 คน ผ่านเกณฑ์ทุกข้อ คะแนนเฉลี่ยรวมอยู่ที่ร้อยละ 77.81 ซึ่งสูงกว่าเกณฑ์ที่กำหนด
